I kinda forgot...

So yeah. I kinda forgot. I kinda forgot how quickly I slide back into a sacrificial routine as a teacher. After a year of being a "non-teaching teacher" and working as Pam from the Office, I actually had time for some serious self-care. I kinda forgot that being a teacher makes taking care of oneself more difficult.

I wake up and from the moment my feet hit the floor I feel like I am literally running. Running out the door with coffee in hand, running into the classroom for the early morning parent meeting, running to the bathroom for a quick two minute pee before the bell rings 'cause only the good Lord knows when I'll have another two minutes to myself. Running around encouraging, loving, cheering on my 24 kindergartners as they interact, engage, and learn their reading, writing, math, social and emotional skills, and science in 2 hours and 45 minutes. Then I get to clean up the craziness for the next round in the afternoon.

I kinda forgot why teaching is so hard. It's demanding. I can't just take a 15 minute break. I have started to slide into the old me. I forgot about the staff meetings, the extra demands placed on us to get everything done in a short amount of time, and the way I feel like just going to bed when I get home.

I can't forget how far I've come. 50 pounds lost is HUGE! I have so far to go, but I can't slide back now. I have to figure out a way to keep my sanity yet be the best teacher I can be. I need a balance. I kinda forgot how much energy teaching takes. Sometimes I get worried. I worry that I won't be able to hack it, that I will revert back to my old ways because I don't have time to cook, exercise or spend time with friends. But then I also forgot that I need to continue to MAKE TIME to do those things BECAUSE I need to be the best teacher I can be. I kinda forget at times that those things that are important to me need to remain a priority.

So I'm going to eat healthy. I am journaling. I have joined a support group at school with fellow teachers who want to get healthy. I NEED to keep on going. For me.

Then I remember those kiddos. Those kiddos that just melt my heart when they tell me I'm beautiful. That I'm the best teacher they've ever had. That I'm sooooooo sooooo funny. And silly. I remember that they may not know how to tie their shoes or sometimes they forget to flush the toilet. But I love them. When a child finally "gets it" and I see the light bulb go off...THAT is why I do this. And that, my friends, is hard to forget.

Back on Track and Farmin' Like a Pro...or maybe like the Minor Leaques

Well, I just finished my first "official week" of back in the classroom with needless orientations on Tuesday, Wednesday and Thursday. My dear friend Miriam and I have had a wonderful week of hanging out and she has graciously allowed me to stay at her kick-ass house in South Seattle. I'm soooo excited to be back in Seattle AND to be back in the classroom. I am also excited to get back in the routine of healthy eating and exercising. It's so much better when I have a routine and I'm back on track and eatin' and workin' out like a pro.

Or maybe like the Minor Leagues.

But I'll get there. I really will.

My life is like a country song.

My birthday was yesterday. I'm 33 years young. I'm happy. I'm getting healthy.

And I'm seriously starting to FREAK OUT!!!!

I was supposed to have 2.5 kids, a husband and a yellow house with white trim and a white picket fence right now.

But I don't.

Instead, I work at an office job that I COULD hate, but don't. Only on Mondays do I allow myself the freedom to be grumpy. I laugh at the accounting acronyms and find myself staring at the bank deposits wondering why MY name isn't K&H Printing.

I live with my parents. Yup. That's right. I'm 33 years old and I'm LIVING AT HOME! So much for the white picket fence. Well, at least a white picket fence that I could paint purple because it's MINE!

And love? humph. guess i'd better get out there and do that speed dating thing. Cause love is definitely not knocking.

But you know what?

For the first time in my life I am passionate about WHO I am. Not what I am doing or where I am working or who my ROOMMATES are! (Hi Dad!)

I feel as though 33 is my breaking out year. I feel great that I am finally figuring out who I am, what I stand for, and what makes me happy. My health has improved and I feel it emanating from my being. When I feel good physically, it's amazing how I feel better emotionally and spiritually as well. I am soooo blessed to have friends that love me despite my faults, and I am working on my faith and growing in my love for God.

So maybe that's a country song. But that's my story and I'm sticking to it.

My First Salad!


So I'm soooo sorry I haven't posted anything in a REALLY REALLY REALLY long time...

So to catch you up, I thought I'd give you some highlights.
(translation: So I thought I'd give you a REALLY REALLY REALLY long post. Sorry 'bout that.)
(Oh and these highlights are chronological not ordered by importance. Although I do think that Carrot Cake with REAL cream cheese frosting is up there. Just sayin'.)

Highlight #1

Father's Day...
I made Carrot Cake with

for my Daddy.


My mama made oatmeal raisin cookies for my uncle.

She's the BEST at that.
It was my first attempt to make something unhealthy and still live to tell about it. I think I did okay, after every one was gone, I only ate half of it by myself! But it's got carrots in it, so it's healthy, right?!?!? :) We quadrupled the cream cheese frosting recipe, 'cause...ya know....you can't have TOO much frosting, and we decided that warm oatmeal raisin cookies with cream cheese frosting is quite a good thing. But a warm oatmeal raisin cookie SANDWICH with cream cheese frosting is pretty much the best thing. YUM!

Highlight #2

My dear roommate and friend Sara is gettin' hitched this Saturday. Last month, her sister and I threw her a shower. It was super fun, and I have to admit, the food was YUMMY!!!

and STILL had time to make cupcakes with lemon frosting for her sister.

Highlight #3

I took a two week vacation to FLORIDA!!! It was AWESOME, BEAUTIFUL, and HOT! (I realize this could be a post in itself, but I am trying to do highlights here people.) I walked and swam every day, and I even MAINTAINED while I was on vacation! Write that one down in my baby book, that's a first for me!!!

She is the most amazing woman, mother, friend, counselor,
and encourager that I have ever met in my life.
I love her so much that I flew to Florida and slept in the same room as her mom, her three children and herself. They must all love me a lot too. :)

I also got to visit with one of my dearest friends from college, Meika, and her husband, Josh. They moved to Florida some time ago, and Meika is 7 months pregnant. She is sooo cute pregnant. It's funny when we all grow up and do grown up things. Like get married and have babies. I still feel like we should be in our college dorm room with her on the top bunk and me on the bottom bunk just TALKING about what we want to do when we grow up...

Highlight #5

One of my dear Bangkok Peeps, Natasha just happened to be in Florida at the same time.
I got to hang out with her a couple of times while I was there.
She has just flown her bad self to Africa, namely Tanzania.
I'm very jealous but excited for her new adventure.
I'm hoping she can find me an Irish-speaking black man...ya think???
well...one can dream.


Highlight #6

Now I'm back...and the BEST part is....my garden is GROWING!!! I made my first, and now SECOND salad of the year! I'm so in love with just being able to walk outside and pick greens and spinach and onions and nasturtiums - yes you can eat nasturtiums! It makes eating your vegetables FUN!!!

Feelin' Sad and Binge Eating

Hey lovelies. I just wanted to write to say that I'm doing okay, but have been dealing with some super tough issues that have happened to a couple of my loved ones and I'm just feelin' a little blue tonight.
I think my journey is going along great...I'm happy, I'm doing fine....and then.... BUMP.

I fall head first into a giant road block. I get stuck. Like mud-up-to-my-knees type of stuck and I really think it's going to consume me. The food, the emotions, the lack of self control. All of my old thoughts, ways and feelings all pile onto me as I'm stuck in this muck. I feel sad, angry, frustrated, ugly and unworthy.

I feel this little nasty voice in my head saying, I'm not worth it, I'm just gonna gain everything back, so why bother trying. And then this other voice in my head, it's actually a softer voice, but firmer says... NO! You have come too far to turn back and you need to think about just how far you have come! We are NOT giving up!

So here I sit. In the muck. I know that things will look better soon.
I just gotta climb outta this muck. One step at a time.

A Day At the Park!




This past weekend my kiddos were here with Erik and Laura. I absolutely LOVE it when we all get to be together. Wyatt loves the Fun Fort, a local favorite at my old elementary school so we loaded up the fam damily and heading on over.

This was their little snail family that they found...much to Grandma and Mama's dislike...
But Aunty didn't mind. :) Exploration is good for the soul...
nothing a little scrub down wouldn't clean!

I DID IT!!!!!!!


I DID IT!!!!! After 22 weeks of healthy living, I have dropped FIFTY POUNDS!!!! Check out the video for cool Before and After Pics and to see what 50 pounds equals in potatoes, butter, chihuahuas and children! :) (What can I say....I'm a tad bit excited!!!!)

Oh the Joys of Gardening!!!

I have been sooooo excited to start a garden this year. I even bought my own barn boots and everything! My parents' garden has lain dormant for quite some time and I have visions of fresh garden produce all summer and Indian summer long.... unfortunately Washington weather is just not cooperating! I think that perhaps May thinks for some reason that her name is March...'cause that's the weather we have been having!

Anywhooo....I am rambling...

I was all set to start planting today but I woke up to rain. MURF. I decided that I still wanted to plant, I would just plant the seeds as starts. So I took some old egg cartons of the cardboard kind and planted bush beans, snap peas, sunflowers and nasturtiums. My mom has always had a nasturtium border around her garden, so in keeping with tradition I wanted to do the same. Did you know that nasturtiums are not only beautiful, they are also edible? :)

I also have my Grammy's Topsy Turvy so I finally planted my 5 different types of tomato plants and my 4 different types of peppers, ranging from red bell to Thai knock-your-socks-off spicy. I'm pretty excited.

Not sure....but feelin' GREAT!

Hello all of my wonderful friends and supporters,

A lot of you have called or texted me to find out what my big number was today....and I'm SOOOO bummed because I'm not at home this week so I don't have my scale to weigh in!!! I'm house/dog-sitting for my cousin Tracy. So I guess I'll have to report to ya'll on Tuesday when I get home. I MIGHT get a chance to sneak up to my place and grab it this weekend.

Anyway, i feel great and am super excited!

Mama's Mama's Day Scones




I had to celebrate Mama's Day early because I'm heading over to Spokane to play with my sweet little rascals, but I thought I'd post this in case any of you wanted to try it.

I have to say, they were soooo delicious, but I haven't added up any of the points or calories yet. This may not have been THE healthiest recipe, but I did do some substitutions to make it healthier... (and counter-act the chocolate chips..heehee)

Mama's Day Chocolate Almond Scones

2 1/2 C Heart Healthy Bisquick
1/4 C brown sugar
1 egg
1/2 C FF yogurt
2 TBL butter, melted (I DID add this, but you could just add more yogurt instead)
1 tsp almond extract
1/2 C chocolate chips
1/4 C almonds (optional)

**about another 1/2 C of bisquick or flour for the cutting board**

Combine Bisquick and sugar (and almonds if desired). Mix in the egg, yogurt and butter JUST until it clings together. Plop on the floured cutting board and knead the dough about 8-10 times. The original recipe said to form into a 6 inch round ball and divide into 10 pieces (the verdict is still out on that one....) but I rolled it out a little bit smaller and made heart shaped scones by using a cookie cutter. I got more servings that way, and it reduced the calories in each serving. :) Sprinkle almonds and a little bit of brown sugar on top of each scone.

Place on an ungreased baking sheet. Bake for 10-12 minutes at 425 until golden. Serves 12 scones.

Yummy Berry Sangria....and I mean YUMMMM. MMMMM. YYYYYY!!!


So I saw this recipe in a Weight Watchers cook book and it had two of my favorite things in it - red wine and berries. How could one go wrong? So I have had it on my "Must Make Soon" list and finally got around to making it this week. Let me tell you, people...it's so delicious even the stars were aligned the night I made it!

Okay, so maybe I exaggerate. But it's so yummy. So I thought I'd share...


1/2 bottle of red wine (or any wine you love...my mama thought it would taste really lovely with a white merlot...I didn't care, so I just used what we had on hand...I'm not a picky wino ya know?)
2 cups frozen berries (I got a huge bag of mixed berries from Costco, but you can use any kind of berry you love)

2 TBL honey

Mix all in a blender until smooth. Pour into a container and freeze. Scoop out and place in a fancy-schmancy dish or wine glass and garnish with a sprig of mint. YUMMMM. MMMMM. YYYYY!!!!

1 Cup is 2 Weight Watcher points or 100 calories.

BBQ Pizza

This was delish! We had a bit of trouble actually making it on the BBQ (it was raining buckets and my dad detached the propane tank to "weed the garden" which was really a ploy to be a pyro...anyway, I digress.)

Pizza Crust:

Many people have their opinions on pizza crust. I have had pizza on Friday practically every week since January 1, and I have tried my pizza crusts a variety of ways. I have to say I think this is my favorite so far. I found it on www.allrecipes.com. I did change it a little bit, and added some oregano, basil, garlic as well as substituted more whole wheat flour for the white flour and added brown sugar instead of white sugar to the yeast.

So here is my recipe:

1 tsp brown sugar
1 1/2 cups warm water (hottest tap water is what I used)
1 TBL active dry yeast
1 TBL olive oil
1 tsp salt
3 Cups Whole Wheat Flour
1/2 C Ground Spelt and Wheat Germ mix (or if you don't have that, just add more Whole Wheat Flour)
1 TBL basil
1 TBL oregano
2-3 TBL garlic

In a large bowl, dissolve sugar in warm water. Sprinkle yeast over the top, and let stand for about 10 minutes, until foamy.

Stir the olive oil and salt into the yeast mixture, then mix in the whole wheat flour and 1 cup of the all-purpose flour until dough starts to come together. Tip dough out onto a surface floured with the remaining all-purpose flour, and knead until all of the flour has been absorbed, and the ball of dough becomes smooth, about 10 minutes. Place dough in an oiled bowl, and turn to coat the surface. Cover loosely with a towel, and let stand in a warm place until doubled in size, about 1 hour.

When the dough is doubled, tip the dough out onto a lightly floured surface, and divide into 2 pieces for 2 thin crust, or leave whole to make one thick crust. Form into a tight ball. Let rise for about 45 minutes, until doubled.

Preheat the oven to 425 degrees F (220 degrees C). Roll a ball of dough with a rolling pin until it will not stretch any further. Then, drape it over both of your fists, and gently pull the edges outward, while rotating the crust. When the circle has reached the desired size, place on a well oiled pizza pan. Top with BBQ Chicken.

BBQ Chicken Part:
2 TBL garlic
1/2 of a red onion
2 chicken breasts
about a cup of BBQ sauce
about 2 cups of low moisture/low-fat cheese

Slice red onion thinly and saute it with garlic in the pan. Add the chicken until brown. Add about a 1/3 of a cup of BBQ sauce until it looks well-coated. Meanwhile, prepare the pizza dough and spread BBQ sauce on the dough. Add the chicken mixture and then the cheese.

Bake for 16 to 20 minutes (depending on thickness) in the preheated oven, until the crust is crisp and golden at the edges, and cheese is melted on the top.

Pumpkin Muffins



These muffins are soooo yummy I feel like I'm splurging! But they are a GREAT source of fiber and for all my Weight Watchers peeps out there, they are only 2 points!

1 Box Spice Cake Mix (just the powder)
15 oz can of pumpkin
1 C Water

Mix together and put in muffin tins.  Bake at 350 for 18-20 minutes until they bounce back when you touch the top of the muffin.  Makes 24 muffins.

Thai Chop Chop Salad

This is so delicious and it's very reminiscent of my favorite Thai salad, Som tam.


Thai Chop Chop Salad


2 Cups Red Cabbage
1 Red Bell Pepper
1 bunch spring onion (more or less to taste)
handful of cilantro, chopped
1/2 cup peanuts

Dressing:
1 Cup Hot Salsa
1 TBL Fish Sauce (or Soy Sauce)
4 TBL Lime Juice (juice of two limes)

Olympic Broccoli Salad


I just had the BEST weekend in Canada. While visiting my dear friends Kelli, Hans and Kristen, Kelli made THE best broccoli salad for our adventure to the Olympics. I just couldn't get enough of this mixture so I thought I'd dub it "Olympic Broccoli Salad" in honor of my Canadian friends and the Olympic-sized fun we had.

 Olympic Broccoli Salad
6-8 cups of broccoli chopped into bite size pieces
1 cup carrots ½ red onion or white onion (add more if you like it more oniony)
½ c sunflower seeds or other nuts chopped up
½ c craisins
2/3 C FF vanilla yogurt
2 tsp pepper

Mix all ingredients. You can also add any other veggie you would like, I have had it with califlower and peppers as well. DELISH! Best when served after chilling in the fridge, as the flavors blend together nicely.

Mexican Omelet Wrap

Mexican Omelet Wrap

I love eggs and I usually make something yummy and extra special on Saturdays when I have more time.  This is a creation of my own that I really love and that sticks with me through the day.



Ingredients:
2 Eggs (Or Egg Substitute)
Red Peppers
Onions
Mushrooms
Cherry Tomatos
Basil
Cilantro
1 whole wheat tortilla







Saute peppers and onions using a tiny bit of Olive Oil. Add Mushrooms and then add the eggs, lighly beaten.  Cook until done, adding the cherry tomatoes, basil and cilantro at the end.  Wrap in a whole wheat tortilla.  DELISH!

Healthy Choose-Your-Own-Adventure Pizza

My family weighs in on Friday morning, and I LOVE that we do that so that we can have Pizza and Beer nights on Friday nights.  Our first Pizza Night used whole wheat pitas, but I will also post a whole wheat crust recipe that is quite delicious and super quick.




Ingredients
1 package whole wheat pitas
1 jar spaghetti sauce
Any Pizza Fixings you love...we used:
feta cheese
olives
peppers
onions
Laughing Cow Cheese
natural pepperoni
smoked ham
mushrooms
cheese

Bake at 350 for about 10 minutes until the cheese melts. YUM!

Paradise Taco Salad



I LOVE LOVE LOVE Costco's Mango Salsa, so any time I get an excuse to use it, I'm a happy camper. Here is a SUPER easy and quick Taco Salad recipe that is sure to spice up those tastebuds!


Paradise Taco Salad
2 tsp Olive Oil
1 Onion
2-3 tablespoons garlic
1 Can Cajun or Carribean Black Beans (or just use regular black beans, that's fine too)
1/2 package Shredded or Ground Bocca Hamburger
3 Cups Whole Grain Rice
1/2 Cup Taco Seasoning, or Taco Seasoning Packet


Taco Fixin's:
Lettuce or spinach
olives
tomatoes
Mango Salsa
FF sour cream
avocado
Non-Fat or Low-Fat Cheese (I personally just stick with the true fat cheese, but just use a lot less.  I like the taste better.  But to each their own...)


Saute onions and garlic in olive oil over medium heat. Stir in Bocca meat until heated through.  Mix beans in and Taco Seasoning.


Serve on Lettuce or Spinach with rice and listed Taco Toppings.  YUM!

Sesame Chicken Stir-Fry
Recipe created by Katie's Mama

2 chicken breasts, sliced thin
1 pack of stir fry frozen veggies (de-thawed and drained of excess water)
1 onion
3 cloves garlic
2 tsp sesame oil
1/4 C Teriyaki Sauce
2 TBL soy sauce or 1 TBL fish sauce
sesame seeds (optional)

Heat Wok or skillet with sesame oil, sauté onions and garlic together for about 1 minute then add the chicken. After the chicken is no longer pink, add the veggies and the Teriyaki and Soy Sauce. Mix for about another minute until the veggies are heated through.

Serve with wild rice or brown rice and sprinkle some sesame seeds on the top if you have them.

YUM!

For my WW peeps....one serving is 1 Cup of stir fry, approximately 4 points...total of 8 points with 1 Cup of brown rice.

Wild Berry Crumble

I got to hang out with some dear old friends from High School and our families this weekend. It was soooo fun to see Tami and Dennis and their two cuties, Ethan and Isabelle, as well as Annie and the Terry's. Great food, super-great company and fun times with Yahtzee for All...(Dennis, my mom is STILL upset about that!)

So I decided that I would make dessert. But I wanted to do it in a healthy but yummy way, as it was only day three I wanted to make it count!

So I hopped on the inter-web to see what I could find. I found a Berry Dessert from All-recipes.com that looked delicious but was loaded with butter and sugar....probably why it sounded delicious. But I didn't let it deter me. I thought I could create something JUST as yummy but without all that fat and sugar. This is what I came up with:

Wild Berry Crumble

The Berry Part:
6 Cups mixed berries (a huge bag from Costco is AWESOME and has Marionberries, Raspberries and Blueberries-YUM!)
4 TBL flour
2 TBL cinnimon
zest of TWO lemons (IMHO you can't have TOO MUCH zest!)
1/2 C applesauce

The Crumble Part:
1 C oats
1/4 C flour
5 TBL brown sugar (1 TBL is 0 points!)
1/2 C applesauce

Toss the berry mixture together and put in a 9x13 pan. Sprinkle the crumble part on top. Bake at 350 degrees for about 20 minutes, or until nice and bubbly. Serve with Natural Fat Free Frozen Yogurt...Delish!

This is a DELISH breakfast that sticks with ya! OR, it's a great "Breakfast for Dinner" meal too! I found it in the From Pantry to Plate Weight Watcher Cookbook (pg 32) except I had to give it some extra spice...with being half Thai now and all... :)


1/2 C diced bell pepper
1/4 C diced onion
1-3 cloves garlic (depending on your own taste)
3 baked potatoes, sliced (it calls for canned potatoes, so go figure)
3 large eggs
3 egg whites (you CAN use the egg substitute here if you would like, but I'm trying to go all naturale!)
1/2 tsp salt
1 tsp pepper
1tsp-3tsp cayenne pepper (depending on if you like it HOT or not!)
paprika
2 tablespoons chopped parsley or cilantro

Preheat broiler. Spray cast-iron or other oven-proof skillet with nonstitck spray. On medium heat add the bell pepper, onion, and garlic until softened, about 4 min.

Mix the eggs, salt, pepper, and cayenne pepper together in a bowl. Pour over the veggies in the pan, gently stirring the egg mixture around the veggies. Cook for about 4 minutes, lifting the edges to allow the eggs to cook. Then place the pan in the oven with the broiler for about 2-3 minutes until the top is lightly browned. For those that are adventurous, go ahead and try to flip that frittata onto a plate. Me, I just sprinkle with paprika and cilantro and dig in.

1/4 of the pan is 2 points. So go ahead, WW peeps...have that second helping! :)

New Year's Day Spiced Apple Pork Roast

Pork Loin Roast
1/2 Jug Spiced Apple Cider (great way to use up the Cider after a party)
1 Onion, chopped
1 Apple, sliced
cloves
2-5 cloves of garlic, depending on your taste

Put all ingredients in Cast Iron Kettle or Roasting Pan. Bake at 350 degrees for about 4 hours. After hour 2, check on it and flip the roast over for easy basting. Roast is done when it flakes off with a fork.

Serve with wild rice or brown rice.
4oz of pork and 1 cup rice = 7 WW points.

New Year's Resolution

So I decided that it was time. It was time to get my batuzki in gear and get healthy. But how do I do that when I love food soooo dang much? Well, I decided that I would try to make food my new addiction, but in a GOOD way. I am on the hunt for THE MOST delicious, tasty, fantastically simple recipes that don't cost much and that are easy enough for even my friend Julie Anne to make. (Sorry JA, I just had to)
