New Year's Day Spiced Apple Pork Roast

Pork Loin Roast
1/2 Jug Spiced Apple Cider (great way to use up the Cider after a party)
1 Onion, chopped
1 Apple, sliced
cloves
2-5 cloves of garlic, depending on your taste

Put all ingredients in Cast Iron Kettle or Roasting Pan. Bake at 350 degrees for about 4 hours. After hour 2, check on it and flip the roast over for easy basting. Roast is done when it flakes off with a fork.

Serve with wild rice or brown rice.
4oz of pork and 1 cup rice = 7 WW points.
