Olympic Broccoli Salad


I just had the BEST weekend in Canada. While visiting my dear friends Kelli, Hans and Kristen, Kelli made THE best broccoli salad for our adventure to the Olympics. I just couldn't get enough of this mixture so I thought I'd dub it "Olympic Broccoli Salad" in honor of my Canadian friends and the Olympic-sized fun we had.

 Olympic Broccoli Salad
6-8 cups of broccoli chopped into bite size pieces
1 cup carrots ½ red onion or white onion (add more if you like it more oniony)
½ c sunflower seeds or other nuts chopped up
½ c craisins
2/3 C FF vanilla yogurt
2 tsp pepper

Mix all ingredients. You can also add any other veggie you would like, I have had it with califlower and peppers as well. DELISH! Best when served after chilling in the fridge, as the flavors blend together nicely.

Mexican Omelet Wrap

Mexican Omelet Wrap

I love eggs and I usually make something yummy and extra special on Saturdays when I have more time.  This is a creation of my own that I really love and that sticks with me through the day.



Ingredients:
2 Eggs (Or Egg Substitute)
Red Peppers
Onions
Mushrooms
Cherry Tomatos
Basil
Cilantro
1 whole wheat tortilla







Saute peppers and onions using a tiny bit of Olive Oil. Add Mushrooms and then add the eggs, lighly beaten.  Cook until done, adding the cherry tomatoes, basil and cilantro at the end.  Wrap in a whole wheat tortilla.  DELISH!

Healthy Choose-Your-Own-Adventure Pizza

My family weighs in on Friday morning, and I LOVE that we do that so that we can have Pizza and Beer nights on Friday nights.  Our first Pizza Night used whole wheat pitas, but I will also post a whole wheat crust recipe that is quite delicious and super quick.




Ingredients
1 package whole wheat pitas
1 jar spaghetti sauce
Any Pizza Fixings you love...we used:
feta cheese
olives
peppers
onions
Laughing Cow Cheese
natural pepperoni
smoked ham
mushrooms
cheese

Bake at 350 for about 10 minutes until the cheese melts. YUM!

Paradise Taco Salad



I LOVE LOVE LOVE Costco's Mango Salsa, so any time I get an excuse to use it, I'm a happy camper. Here is a SUPER easy and quick Taco Salad recipe that is sure to spice up those tastebuds!


Paradise Taco Salad
2 tsp Olive Oil
1 Onion
2-3 tablespoons garlic
1 Can Cajun or Carribean Black Beans (or just use regular black beans, that's fine too)
1/2 package Shredded or Ground Bocca Hamburger
3 Cups Whole Grain Rice
1/2 Cup Taco Seasoning, or Taco Seasoning Packet


Taco Fixin's:
Lettuce or spinach
olives
tomatoes
Mango Salsa
FF sour cream
avocado
Non-Fat or Low-Fat Cheese (I personally just stick with the true fat cheese, but just use a lot less.  I like the taste better.  But to each their own...)


Saute onions and garlic in olive oil over medium heat. Stir in Bocca meat until heated through.  Mix beans in and Taco Seasoning.


Serve on Lettuce or Spinach with rice and listed Taco Toppings.  YUM!
